The body's metabolism is not solely dependant on simple sugars. The liver
has glycogen storage, which transfers into this energy when needed for
bursts of exertion, ie running. All the other food components can also be
transformed into energy. Simple sugar, without the rest of the components,
could end up with symptoms, the "morning let down". That is overcome with
adequate amounts of protein and fats during the meal prior. I'm not sure
where you are coming up with simple sugars from fat. From an internal
metabolic point of view, all food compenents can be turned into simple
sugars.

Actually, that meal you analyzed works pretty good to prevent hypoglycemia.
