I'd try Dr. John Young or Dr. Don Petrin at Purdue University. They have been
doing that sort of course for a while. JDY_at_ Purdue.edu

The folks at Western Michigan University could also help (Joe Dunlap and Dr.
Maureen Pettitt). I don't have their correct e-mail but try _at_wmich.edu for an
address.

There are others and you should get some good response from this group. I'm
sure Vince Mancuso knows some folks at Embry-Riddle that would have some ideas.
