Your question is fairly common and the response is equally relatively simple.

Although we'd like to think that pilots require special "treatment", their needs
are no different than anyone else. The FDA has come up with its "Food Pyramid"
and other nutritional and medical organizations have the same essential
variations on the same information we received in grade school. There are no
special needs for aircrew.

Having said that, it is more difficult for some crews, depending on their
"mission", to get at the proper nutrition. Vending machine lunches leave much
to be desired. I know some pilots who "brown bag" their meals, knowing they
won't get a decent meal on board or in the hotel. Other creative means to
achieve the nutrition goals stated above are used.

So, the challenge is not to find a special diet for aircrew, it's how they can
access that nutrition that is already identified.
